White, Chicken Lasagna

I ♥ Pinterest.  No, seriously...I REALLY ♥ Pinterest!!  Over the last several weeks, I have made at least one new recipe I pinned each week!  Last week, I found this pin:

 How delicious does that look?!?!?  I'm pretty sure I started drooling when I found it!  As I am a self-proclaimed editor (I'm not so great at creating, but I kind of rock at tweaking things to make them new & different & fit MY taste), I used this as a guideline & turned it into the following:

White Chicken Lasagna
*1 box of "No Boil" lasagna noodles (I love using "No Boil" these days...anything to save a step!)
*4 cups of cooked chicken, diced
*16oz. chopped, frozen spinach, thawed & drained REALLY well
*1 zucchini, shredded
*1½ cups cottage cheese
*1½ cups ricotta cheese
*1 egg
*1 cup grated Parmesan cheese
*1 cup shredded mozzarella cheese
for the white sauce:
*½ cup chopped white or yellow onion
*2-3 cloves garlic, minced (we like a lot of garlic)
*½ cup butter
*½ cup flour
*3 cups chicken stock
*1 cup milk
*1 teaspoon dried basil
*1 teaspoon dried oregano
*1 teaspoon dried parsley
*½ cup cream cheese
*2 cups shredded mozzarella cheese

Preheat oven to 350°.  In a medium bowl, mix spinach, zucchini, egg, cottage cheese, & ricotta cheese, and set cheese mixture aside.  To make the sauce, melt butter in a large sauce pan.  Add garlic & onion & cook until tender, stirring frequently.  Stir in flour & cook until it begins to bubble.  Slowly add chicken stock, milk, basil, oregano, & parsley, stirring constantly, bring to a boil, & stir in cream cheese & mozzarella until fully melted and incorporated.

Pour some of the sauce into the bottom of a 9"x13" baking dish, until just covered (about ½ cup).  Layer ⅓ of the noodles into the dish.  Spread ½ of the cheese mixture over the noodles, top with 2 cups of diced chicken, and pour some sauce on top.  Then, repeat...noodles, cheese, chicken, sauce!!  Layer on the last of the noodles, and top with the remaining sauce.  Sprinkle the 1 cup of Parmesan & 1 cup of mozzarella on top, and bake 40-45 minutes, or until noodles are cooked, cheese is melted, & sauce is bubbly!  If the top layer of cheese browns too quickly (like mine did), cover with foil (which I'll do next time) to prevent it from burning. ;)
